Frozen Yoghurt

Just three days ago, my friend took me for frozen yoghurt and I topped mine with nuts, pineapple and coconut sauce – healthy options with lots of nutrients. I really enjoyed it. So, as I always do, I was keen to try making it.

Since today is Chocolate Ice Cream Day, what better day than today to try out some ideas.

You can start with home made frozen yoghurt or you can just get the store bought one to use as a base. I prefer to use home made yoghurt in place of store bought because it is lower in saturated fats and if any heat at all has been used in the process, it would have killed all the probiotics our guts looks forward to.

Below are two recipes you can try, both taste pretty awesome.

Home made Fro-Yo
Mix the following in a bowl,
1 quart yoghurt
3/4 cup heavy cream
3/4 cup sugar (or stevia if you prefer)
1 Tablespoon corn syrup… this will prevent crystalisation if you decide to freeze it

Just churn all this is your ice cream maker until it resembles soft ice cream.
If you don’t have an ice cream maker, and don’t really want to invest in one, you can just use plain yoghurt. The texture is different, but there is nothing to say it isn’t delish!

Now the toppings, dark chocolate is much healthier than any of the lighter ones.

In a bowl,
Stir together 1/3 cup sugar and
1/3 cup water
After 2 minutes, add in milk. Bring to a simmer.

Remove from heat and add 2 cups of dark chocolate. Stir until chocolate chips are completely incorporated. Add vanilla extract, and stir until smooth. Pour into a squeeze bottle and chill.

To serve,
chopped nuts or granola add some tasty texture
use strawberries or pineapple for natural sweetness
and drizzle the sauce on to frozen yoghurt.

For those of you who prefer a more intense chocolate flavour, try the recipe below.

Chocolate Fro-Yo
In a saucepan
stir together 3/4 cup sugar
1 tablespoon corn starch
and 3/4 cup dark chocolate
Allow to melt

In the same saucepan
Add 1 can of low fat evaporated milk
stir constantly until it thickens.

Remove from heat, mix in
1 cup yoghurt (preferable low fat)
and vanilla extract.
Cool in the fridge

Pour the chilled mixture into your ice cream maker. Again if you want a firmer consistency, just put it in the freezer.
