I have to admit that almost everyone in my family loves iced lemon tea. One of my sons hates anything lemony but his twin loves it! I have never really liked the bottled and packed options from the store but I did create a recipe that all of us love… including my clients. So what better day to share these recipes than today.
My basic recipe is quite the same for most of my variations. I will point out the differences as go along.
Start with making a sugar syrup
For this is you prefer it unsweetened, all the better and you can also use stevia or honey but I like using my sugar syrup.
3/4 cup white sugar
3/4 cup water
Into a saucepan on a low heat until the sugar melts.
Once it is off the flame I add 2 tablespoons of brown sugar for that awesome caramalised flavour.
Next is the tea
For this, you can use any tea of your preference but I enjoy black tea the most so I am going with that.
In a pot I put a pitcher full of water and bring it to a boil. This yields approximately 5 -6 tall glasses.
and I add 1 dessertspoon of tea
I bring it to the colour I like (2 – 4 minutes)
Squeeze the juice of 3 to 4 lemons into the tea. Using a veggie peeler, peel the skin into the tea as well
A secret I learnt – add 1/2 teaspoon of baking soda into this. Belief me, it makes all the difference to eliminating any tea-ish after taste. If you add the lemon before the soda, then you will have a bubbly reaction. Not to worry, it settles down
While it is hot, we are going to do the following…
Iced Lemon – Ginger Tea
5 inches of ginger and squeeze the liquid into the tea – go ahead and throw in the gingeer bits as well.
For this recipe I use (raw or otherwise) honey which has been melted into 3/4 cup water
Mix and allow to cool together
Iced Lemon – Coriander Tea
Oh! I love this. Most people give me strange looks until they taste it so trust me on this.
3 plants of coriander – you can throw in the washed root as well
Add to the hot tea and mix in the required syrup
Allow to cool together
Iced Lemon- Cucumber Tea
Definitely the most cooling of all the recipes
Grate 1/2 a cucumber with the peel and squeeze the liquid into the hot tea – go ahead and throw in the cucumber bits as well.
Mix the sugar syrup into the tea according to your taste.
Iced Lemon and Mixed Fruit Tea
So this recipe is slightly different
Separately, blend together
The sugar syrup
with 15 peeled grapes and
half an apple (you can use green Granny Smith apples if you enjoy a slightly tangy flavour). Allow to chill
Into chilled tea, add the chilled syrup and squeeze in the juice of 2 -3 limes
Add chopped apple pieces.
There is no point adding grape bits because they tend to sink to the bottom
All these options have excellent nutritional value and regularly having these can definitely help reduce some symptoms.
